Recipe a day

So, it's my goal to post a recipe a day for a month...Woohoo! I have lots of yummy recipes that should be shared with everyone! Now, I'm no Pioneer Woman, I don't usually take pictures while I make the food, just after! The recipes tend to be so easy*. Here goes recipe number 1...





Chicken and Doritos Casserole



You will need:

4 boneless, skinless chicken breast, shredded
1/2-1/3 bag of Doritos (depends on how much you want)
1 can Rotel tomatoes, drained
1 can cream of chicken soup
1 can cream of mushroom soup
1 can cheese soup
1 block (shredded) or package pepper jack cheese
I also use a little bit of cheddar cheese too
Rice (I use 2 boil in a bag pouches)



What you need to do:

-Heat oven to 350*
-Boil the chicken in spices (salt, pepper, onion powder, garlic powder, Cajun seasonings, Lawry's) for an hour or so till done. Save broth, shred chicken when cooled (I put it in the freezer to cool off)
-Mix soups together in a pot and heat
-Place chick in a 9x13 casserole dish
-Pour half the soup over the chicken and spread it
-Crunch a few hand fulls of chips over
-Spread about 1/2 the cheese over the chips
-Spoon other half of the soup over the cheese
-Crunch more chips over that
-Sprinkle the rest of the cheese over the chips
-Add the Rotel on top (I only use about 1/2 of the can)
-Bake for about 35-40 minutes until the cheese is melted and bubbly.
-Heat up the broth and cook the rice in it (picks up all the flavors and tastes delicious!)
-Serve the casserole over the rice and enjoy!
